You want to make sure you have both a vacuum packing machine and vac pack bags. The vacuum packing machine comes in two varieties – external and chamber. One is sealed on the outside, while the other is sealed inside.

 

External Vacuum packing machines

 

An external vacuum sealer is typically used for small amounts of food. However, liquids and sauces cannot be sealed with the external vac machine.

Chamber Vacuum packing machine

Chamber machines usually use flat bags, but sometimes embossed bags are used. The reason for this difference is because embossed bags are more expensive.

To seal the bag, just put it inside the chamber with the open edge against the sealing bars. When you close the lid and start the cycle, an air pump removes the air from the whole chamber. Since there is no over-pressurization of liquids, anything inside stays in place.
